Roasted New York Strip Steak With Chimichurri Sauce

Ingredients

For the New York Strip Steak:

  • 2 New York strip steaks, about 1 inch thick (approximately 1.5 pounds total)

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

  • 2 cloves garlic, smashed

  • 2 sprigs of fresh rosemary or thyme (optional)

For the Chimichurri Sauce:

  • 1 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • 4 cloves garlic, minced

  • 1/4 cup red wine vinegar

  • 1/2 cup extra-virgin olive oil

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes (optional, for heat)

  • Salt and freshly ground black pepper, to taste

Instructions

1. Prepare the Chimichurri Sauce:

  • Combine Herbs and Garlic: In a medium bowl, mix together the parsley, cilantro, and minced garlic.

  • Add Vinegar and Oil: Stir in the red wine vinegar and extra-virgin olive oil until well combined.

  • Season the Sauce: Add dried oregano, red pepper flakes (if desired), salt, and black pepper. Mix thoroughly and adjust seasoning to taste. Set aside to let the flavors meld.

2. Cook the New York Strip Steak:

  • Preheat the Oven: Set your oven to 400°F (200°C).

  • Season the Steaks: Pat the steaks dry with paper towels. Brush each steak with olive oil, then season generously with salt and black pepper.

  • Sear the Steaks: Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil. Once the oil is hot, add the steaks and sear for about 2-3 minutes on each side until a golden-brown crust forms.

  • Finish in the Oven: If using rosemary or thyme, add it to the skillet. Transfer the skillet to the preheated oven and roast the steaks for about 6-10 minutes, or until they reach your desired level of doneness.

  • Rest the Steaks: Remove the steaks from the oven and let them rest for 5 minutes before slicing.
